Ingredients
- 1 ¼ lbs pork tenderloin (5 oz, 5 oz, 5 oz, 5 oz portions)
- ⅓ cup olive oil
- ¼ cup apricot preserves
- 1 ½ tbsp soy sauce
- 1 ½ tbsp white wine vinegar
- 2 tsp minced garlic
- 4 cups watermelon chunks
- 2 cups cherry tomatoes
- 2 cups arugula
- ½ cup feta
- 2 tbsp sherry vinegar

Step 1
Heat a grill, grill pan or heavy skillet over medium-high heat. Rub pork tenderloin with 2 tbsp olive oil; season with salt and pepper. Grill 10 minutes, turning occasionally.

Step 2
Meanwhile, stir together apricot preserves, soy sauce, white wine vinegar and garlic in a small bowl. When pork has browned, brush with glaze and continue cooking, brushing occasionally, until internal temperature reaches 145 degrees F. Remove from grill and let rest 5 minutes.

In a bowl, combine watermelon, cherry tomatoes, arugula and feta. Drizzle with remaining 4 tbsp olive oil and the sherry vinegar. Season with salt and pepper to taste.
